Green olive tapenade is produced from fresh green olives of the Chalkidiki variety, with excellent nutritional characteristics, such as a rich flavour, a special aroma and an appealing colour. The green olive fruit is rich in nutritional and dietary elements. It is one of the most important ingredients of the Mediterranean diet and a traditional Greek product. The benefits of green olives regarding the diet are connected to the mono-unsaturates whose consumption is linked to reduced risk of arteriosclerosis, more so if they substitute saturated fats in our diet. The olive fruit is a known source of phenolic compounds with beneficial properties for people. They are phytochemicals with antioxidant properties which help eliminate the free radicals which destroy cells. The main phenolic substance which can be found in the flesh of the olive is elephrophin.
The tapenade can be served on its own as a spread on bread, breadsticks and rusks. It is an excellent appetiser and accompaniment of many viands.
