The famous Kalamata olive which the tapenade is based on is undoubtedly one of the best table olive varieties worldwide. Its tapenade is a very tasty appetiser. Its black colour is owed to the presence of anthocyanins, which are strong antioxidants. They contain fat soluble vitamins Ε and β-carotene, which is the so-called provitamin Α. They also contain significant minerals (phosphorus, iron, calcium, magnesium and potassium), as well as many trace elements, such as copper, zinc and magnesium. They are rich in vegetable fibres. Hydroxytyrosol, tyrosol and flavonoids are some of the bioactive ingredients of the olive fruit. Olives are a very good source of mono-unsaturates.
They are a key ingredient of the Mediterranean diet.
The product is served on its own as a spread on bread, breadsticks, rusks. It is also an excellent appetiser and accompaniment for vegetables and salads.
