Pear and Ginger Marmalade

This is a marmalade, a typical spread, with 2 choice raw materials, pear and ginger. Homer called pears a «gift of the gods» in the Odyssey. They contain vitamin B3, vitamin B6, vitamin C, phosphorus, copper and potassium, as well as lower amounts of manganese, magnesium, calcium, zinc and iron. They are a rich source of fibre, wich helps combat constipation. They are rich in antioxidants, such as b-carotene, lutein and zeaxanthin, and are a good source of minerals. Their high pectin content makes them very efficient in reducing cholesterol levels. Ginger has been used as food and medicine since ancient times. It contains potassium, zinc and polyphenols, the latter being the cause of some of its beneficial properties. It has few calories, but is the source of numerous vitamins. Gingerol, as contained in ginger, is the reason for its distinct aroma and spicy flavor. This marmalade pairs well with cold or hot cheeses (graviera, parmesan), as well as roasted or fried cheeses such as hallumi and feta cheese.
